Target Learners

  • Persons with a passion for baking.

  • Budding & existing entrepreneurs – interested in stating their own baking-based business or enhancing their current skills.

Learning Objectives

Learners will be able to learn both the theoretical and practical elements of baking that will allow them to enhance their competencies. This workshop will also illustrate how recipes can be manipulated to include various flavours and ingredients which can be used for seasonal designs, themes, dietary and health requirements (sugar and diary free, eggless options etc). For this workshop, the flavour of choice is pumpkin spice.

Upon successful completion, learners will be able to:

  • Understand food safety and preparation requirements.
  • Understand measurement requirements for both dry and wet ingredients.
  • Learn how to manipulate the ingredients and mixing techniques to obtain optimal dough consistency and final product.
  • Learn how to measure the ingredients and other techniques in making the icing.
  • Learn various decorating techniques.
  • Understand simple mistakes that can arise and their solutions.
  • Learn about optimal storage and packaging requirements.

Course Content

Food safety and preparation requirements

Measurement of both wet and dry ingredients

  • Wet – liquid conversions to match the proportion of dry ingredients for the right consistencies.
  • Specific details of certain brands of essence and other wet ingredients.
  • Dry – understanding how to manipulate/adjust recipes in the event of any error/s in measurement of ingredients.
  • Understanding the different types of flour, sugar and rising agents and their substitutes in line with the needs of different diets – vegetarian/eggless, gluten and sugar and diary replacements.

Equipment – measuring, mixing, and baking tools and other apparatuses.

Mixing Methods

  • To make the right dough – including using different flavours such as pumpkin spice.
  • Making the icing – using different colours, best practices on brands etc.

Decorating Techniques

  • Steps and best practice on outlining, flooding, wet on wet patterns, layovers, and stencilling onto dried cookies.

Storage and packaging methods.

Mode of Delivery: Face-to-Face.

Cost: $1,000TTD – a 50% deposit is required to confirm your spot. The balance is due on or before Friday October 27th, 2023.

Schedule: Saturday October 28th, 2023, at 10am to 2pm. (One day)

Requirements: All consumable materials, recipes, and tools provided.

Assessment: There is no formal assessment as this course is fully practical. Learners will be able to see in action, the conversion of theory into practice and be able to take home with them, their scrumptious creations. Each student will be making and decorating their own sets of cookies.

Note: A Certificate of Participation is awarded upon successful completion.

About the Facilitator

Teacher, self-taught baker, and cake artist – Sumayyah Salim.

Ms. Sumayyah’s pleasant personality is not only appreciated by her students but welcomed by her clients as well. In addition to being a registered primary school teacher, she is a self-taught baker with over seven years’ experience. Sumayyah followed her passion for baking at an early age and specialises in not only wedding and specialty cakes but also in whipping delicious pastries, cupcakes, and cookies.

Her experience over the years has taught her various aspects of entrepreneurship and the need to be innovative and creative especially as more persons are in demand for quality, best tasting deserts for their special events. All the while, maintaining excellent customer service.

In addition to owning an operating her own cake shop (IG @mayascakery), she is also a full-time teacher at Platinum Learning Institute and is pursuing a master’s degree in Curriculum and Instruction. She currently holds a of Bachelor of Education (primary). Sumayyah believes that the more you know, the more you can create and who doesn’t want to create a slice of sweet heaven every now and then.
